Old Ebbitt Grill is one of the nation’s highest grossing restaurants. It’s also one of D.C.’s busiest dining spots—and it serves plenty of oysters. Old Ebbitt’s formula is simple enough: Buy a ton of product and use competitive pricing (plus a kick-ass oyster happy hour) to create high demand for said product. While it’s nice to root for smaller restaurants offering oysters, it’s hard to argue with a place that offers so many high-quality, fresh bivalves priced so low. Volume, alas, is a double-edged sword. Old Ebbitt’s rapidly shucked oysters are almost always flecked with bits of shell, but flavors of brine and brightness quickly eclipse such minor imperfections. Five or six varieties grace the raw bar menu most days, with the most popular oysters selling out regularly. A dozen cost $23.95, but during happy hour, the price is cut in half. (Michel Richard’s Central asks $18 for just six.) It’s a deal that’s so sweet, it’s easily the city’s best.
