After a steady diet of Potbelly, Cosi, and the like, Washingtonians were quick to embrace Taylor Gourmet’s honest take on the Italian hoagie. Of course, you could understand if vegetarians weren’t as fast to adopt the shop, given that its extensive menu boasts a mere three veg-friendly sandwiches. But all these meat-resistant eaters need to do is take one bite of Taylor’s Spring Garden and everything would be forgiven. Rather than dabble with meat-like textured proteins, the Spring Garden gets serious mileage out of just two primary ingredients, seasoned broccoli rabe and sharp provolone, proving once again that the Italian model of relying on quality ingredients is often enough for a satisfying meal. Though the meat dependent can opt for the same combination with a chicken cutlet, it would be a shame to deprive such tasty veggies top billing.
